Viva Abejas: Review of Tamayo in Denver

Chef Richard Sandoval has created a special menu, Viva Abejas (long live bees in Spanish), at Denver’s Tamayo Mexican Restaurant. From March 21-April 23, taste a bee-centric and plant-based menu option, which celebrates the Earth and the significance of bees to the food cycle.

Located at 1400 Larimer St., Denver, this restaurant is convenient for a pre-theater meal because it is walking distance from the Denver Center of Performing Arts. The ambiance is colorful inside, and the food is presented artistically. Recently, I made a reservation prior to an 8:00pm show and was able to experience this bee inspired menu.

We began with Margarita Flores, a hibiscus-infused blanco tequila, lime local honey, sal de chapuline, and honeycomb. We added guacamole, salsa and chips, which were not officially associated with the bee menu. Next up on the Viva Abeja’s selection was Charred Pear and Avocado Salad and Enchiladas Doradas, which were delightful and delicious! We also tried the other bee-themed margarita, the honey lavender margarita, which contained blanco tequila, lime, honey, lavender, crème de violette, and triple sec.

 

The Viva Abeja’s menu hopes to spread awareness on the importance of bees to our food system. Proceeds from the Viva Abejas campaign will be donated to the World Bee Project. I recommend tasting this special menu before April 23. Learn more at eattamayo.com/viva-abejas
